Boots Bakery is a genuinely rare resource for vegan and gluten-free diners in Spokane, now located inside Saranac Commons — the pumpkin waffle is the signature, famous dish, alongside vegan meatloaf, tofu scramble, and cheesy Brussels sprouts and kale, all built from an eclectic, funky space made with reused and recycled materials. Many reviews specifically thank the restaurant for making dining out possible again after years of dietary restriction.

Worth knowing: a small but notable number of reviews, including from people identifying as celiac, report getting sick, citing that the kitchen isn't a fully dedicated gluten-free facility despite how it's marketed. That said, the majority of reviews report zero issues and high satisfaction, and it remains a beloved downtown spot for lunch, coffee, or a relaxed cocktail.
