Cochinito brought real fine-dining technique to a fast-casual taco counter downtown, from former Clover chef Travis Dickinson — pork cheek carnitas, birria, and octopus and brisket tacos are widely cited as some of the best (some say the best) in Spokane, backed by house-made chips, salsas, and a well-regarded ceviche and queso fundido. The Day-of-the-Dead murals and quick counter service keep it feeling fun and approachable despite the culinary pedigree behind it.

A few reviews mention slow service during busy stretches — one cited a 40-minute wait just for chips — but that seems tied to popularity rather than a consistent pattern. Otherwise, this is about as close to universally praised as a restaurant gets on this list.
