Hat Trick is West Central's only brewery, and it leans fully into its soccer ("fútbol") theme — three friends, all previously of River City Brewing, built a comfy, communal taproom around early-morning Premier League matches, a small-batch (2-barrel) rotating beer system, and a food menu including a Bahn Mi and a "Classy" grilled cheese. The brewery donates a percentage of Sunday profits to a rotating local charity, currently Shriners Children's Spokane.
As a newer spot with a smaller review base, there isn't yet a clear pattern of complaints to point to. Worth checking out for the genuine community-first ethos and the early-match crowd, if that's your scene.
