We haven't made it in for a visit yet, so this one's built from what fellow diners and locals are saying — we'll update it with our own take once we've pulled up a chair.

Indicana is a genuinely original concept — Indian and Mexican flavors combined by chef Noreen Hiskey (formerly of pop-up Inland Curry) and business partner Chip Overstreet (former Spiceology CEO) — and it's already been recognized as the Inlander's Best New Restaurant 2025, with Hiskey named Best Chef 2026. The naan tacos (pork vindaloo, chicken tikka), banana leaf-wrapped salmon with Kerala coconut stew, and mango enchiladas are unlike anything else on offer in Spokane, or arguably the country outside a similar concept in Mexico City.

The space is small and fills up quickly, so a reservation is genuinely worth making, especially for dinner. One review mentioned an aftertaste on the bread that didn't land for them, but overall feedback is enthusiastic and this is a real breakout success story worth experiencing.
