Wild Sage has been a downtown staple since 2006, and it wears that experience well. Warm earth tones and big windows set a mood that's relaxing by day and intimate by night — the kind of room built for anniversaries, business dinners, and dates you actually want to impress someone on. The kitchen leans into what's local and in season, with duck, a beautifully done calf's liver for those who ask, and polenta "fries" that regulars order without glancing at the menu. Don't skip the popovers — they've become a signature in their own right.
It's a full-service bistro through and through, so the experience can vary a touch from visit to visit, especially on busier nights when pacing slows down. That's the nature of a place this popular. Nearly two decades in, Wild Sage remains one of Spokane's most reliable special-occasion tables.
